i hav to steal the famous phrase from Martin Yan, 'if weinnie can could, so can you'. everything i cook i maintain the dish at its simplicity. easy ingredients +easy cooking methods but of course must be tasty too. soya sauce chicken is a super simple dish
Ingredients (for 3pax)
*3 chicken legs (ask them to help cut it into drumstick and thigh for easy washing and cooking)
*dark soya sauce (for color)
*light soya sauce (for the saltiness)
*eggs (of course!! )
Step 1: Boil the eggs. remember to add some salt. if the eggs floats means that the egg has gone bad. it has to sink in the water. in the event of the egg shell cracking, adding salt helps to 'seal' back the cracks in the shell.
Step 2: Marinate the chicken with dark and light soya sauce and leave it for 15 mins.
Step 3: Add oil to the pot, and 'pot' fry the chicken with the cinnamon stick and star anise. then pour in the dark and light soya sauce. i nvr note down wat is the quantity i use. it really depends on how salty you wan it to be.
Step 4: add the rock sugar.
Step 5: add the hard-boiled eggs.
Wait for about 2 hours and DONE. ready to scoop it out and EAT. Itadakimasu :)
